1.50<\/span> lbs<\/span> Small Potatoes<\/span><\/div>\n
2<\/span> lbs<\/span> Boneless Skinless Chicken Breast <\/span><\/div>\n
1<\/span> tbsp<\/span> Salt <\/span><\/div>\n
1<\/span> tbsp<\/span> Black Pepper <\/span><\/div>\n
2<\/span> <\/span> Packets Dry Ranch ( Hidden Valley)<\/span><\/div>\n
2<\/span> cups<\/span> Mexican Blend Shredded Cheese <\/span><\/div>\n
1<\/span> cup<\/span> Cooked and Crumbled Bacon <\/span><\/div>\n
½<\/span> cup<\/span> Diced Green Onions<\/span><\/div>\n
2<\/span> tbsp<\/span> Olive Oil<\/span><\/div>\n<\/div>\n

Preheat oven to 450 degrees F. <\/p>\n<\/div>\n<\/div>\n

\n

Spray casserole dish with nonstick cooking spray. <\/p>\n<\/div>\n<\/div>\n

\n

Dice small potatoes and place into large bowl, add 1 tsp salt, 1 tsp pepper, 1 tbsp olive oil, and 1 packet dry ranch. Toss until well mixed.<\/p>\n<\/div>\n<\/div>\n

Place potatoes into prepared casserole dish. ( save that bowel we are going to use it again for the chicken.)<\/p>\n<\/div>\n<\/div>\n

Bake potatoes for 30 minutes, stirring every 10 minutes, until almost thoroughly cooked
\n( they will not be fork tender yet).<\/p>\n<\/div>\n<\/div>\n

While the potatoes are cooking, add the cubed chicken to the bowel you used for the potatoes. Add 1 tsp of salt, 1 tsp of black pepper, 1 tbsp of olive oil, and 1 packet dry ranch<\/p>\n<\/div>\n<\/div>\n

Once the potatoes have cooked for 30 minutes, remove casserole dish from oven and lower oven to 400 degrees F.<\/p>\n<\/div>\n<\/div>\n

Top the cooked potatoes with the raw marinated chicken. <\/p>\n<\/div>\n<\/div>\n

\n

Cover the casserole dish with aluminum foil (Warning: Casserole dish will be VERY hot so use oven mitts to do this).<\/p>\n<\/div>\n<\/div>\n

Place casserole dish back into the oven and cook for an additional 20 minutes ( or until chicken is fully cooked). <\/p>\n<\/div>\n<\/div>\n

Take casserole dish out of oven and top with shredded cheese, bacon, and green onions.<\/p>\n<\/div>\n<\/div>\n
